Rajesh Jha is a professor in the Department of Human Nutrition, Food and Animal Sciences at the University of Hawai‘i at Mānoa. His expertise is in animal nutrition and his research specialties include animal gut health and physiology, monogastric animal nutrition programing and modeling, and evaluation of animal feed and feed additives. Prabhat Khanal is an associate professor of sustainable animal nutrition at the Faculty of Bioscience and Aquaculture (FBA), Nord University, Norway. He completed his Master in Agriculture from the Robert H. Smith Faculty of Agriculture, Food, and Environment, the Hebrew University of Jerusalem, Israel. Later, he obtained his PhD in Nutrition and Physiology from the Faculty of Health and Medical Sciences, Department of Veterinary and Animal Science, University of Copenhagen, Denmark. He held the Marie-Curie status Scientific Fellow post-doc position in Nutrition and Lipid droplets at the Department of Nutrition, University of Oslo. His current research focuses on identifying, characterizing, and utilizing novel and alternative sources of feed and food. In particular, he aims to evaluate and characterize a wide range of insect species as a future protein source for animal feed and human food applications. He has published 28 scientific articles and presented at international conferences, seminars, and symposiums. He is also the principal investigator of a collaborative project between Nord University, Norway, Agriculture and Forestry University, Nepal, and Kathmandu University, Nepal: Establishing the Circular Economy-based livestock sector through collaborative Educational and Research activities (CEER) that involves 5 PhD and more than 30 master students.
