Ruth Nieman Author

Ruth Nieman is an English food writer and author based in Israel. Although beginning her professional life as a nurse in the United Kingdom, her love of food was never far from the surface. Eventually she followed her instincts, retraining in food and wine in London before launching her own catering company specialising in Middle Eastern and Jewish cuisine. The success of her catering work led her into food writing, and she has since published two other books: _The Galilean Kitchen_ and _Freekeh, Wild Wheats and Ancient Grains_. She also writes a Substack newsletter called _Cultural Bites_, exploring the culinary traditions of her heritage and the rich, ancient food cultures of the Middle East.
